MLBlogs has a pretty cool setup for new users signing up, letting them basically choose a single theme, but alter the background based on their favorite team...Can something like this be accomplished in MU? I think it's a pretty cool concept.

Sure it can, it's only a theme option. It's not even mu-specific, just a theme issue.

It's not something done out of box. It's something that they custom coded.

If they look at any theme out there with the ability to pick different stylesheets, it's the same thing.
