I'm currently testing adding new users and when I register and try to open the site get a blank page (but can login) - the site only shows when a theme is selected.
I deleted all but one theme and the new users still come up blank...
How can I set a default theme for new registrations?

Did you delete the them int he /default/ folder? If so, that is why. Blank screen means error, and by default, MU looks for the theme in the /default/ theme folder.
If you want to set a different theme as the new default, place your theme in the /default/ folder (a hack), or use the New Blog Defaults plugin.
