I tried the 'maintenance mode' plugin but it seems incompatible with MU. Or maybe it's just on my system. Basically, I just need a quick page to cover up the work I'm doing now. Any help would be appreciated.

The easiest way is to code a quick and dirty html page, then upload it as home.php into the folder of the default theme (be sure to back up the original) then activate that theme on the main blog.
I usually set up a dummy blog (say, sandbox.yourdomain.com) to play around with themes and plugins while the main blog gets the "coming soon" home.php

Those landing page themes work good for the main blog, and a plugin to set a different theme (the one you're working on) for logged in users.
