I want to switch the statistics plugin I use. Are there any risks if I just delete the plugin without deactivating it?
I'd have to remove database tables one by one, but thats not a problem.

Not unless you have hard coded calls to functions that the plugin provides. Like in a template, theme, etc.
Other than that, no big deal. WP sees it's not there, updates itself accordingly.
Although it may leave some settings or something else in one of the meta tables. Then again, a lot of plugins don't remove those on uninstall/deactivate anyway.
