I tried doing a quick search for this but wasn't able to come up with anything.
I'm looking to have blogs in this fashion on my server:
blogs.domain.com/blogname
Would a wordpress subdirectory installed in the blogs subdomain accomplish this?

Yes.
Install it here: blogs.domain.com/
Pick the subdir option.
Best bet would also be to set up blogs.domain.com as an actual; account instead of trying to run it off as a subdomain. I believe Apache will run it as a redirect which would put more strain on your server as it would have to resolve that redirect for each and every access and page view.
