in the Options menu, when "visiting the site - nothing appears. Just a "whiteout". Going back to that page in the Admin -> Options, it displays the page up to the point of "Dashboard Blog", everything after that is gone.

That would be known as the "white page of death." Look in your error logs. There's some sort of major php error.
