Forgive me if this has already been asked, it is nearly impossible to search for a solution to this based on the keywords.
When editing a post with, for instance a "&" in the title, MU changes this to a "&". Some users have complained about this, and I am wondering if there is an official or unofficial fix for this?

That woudl be default Wordpress behaviour. Check over in the regular wordpress.org forums.
And the search at the top of the page goes to google, but the internal site search is here:
http://mu.wordpress.org/forums/search.php
And is listed at the bottom (I think) of each sub-forum.
It works much better, but I still think you'd be better off finding the answer over in the regular WP forums, or even the codex.
