I want to run multiple and separate domains hosted on the same server, each running WP without having to run separate wp installs.
I do NOT want to use subdomains or subdirectories.
In my brief searches, it is not obvious that one install can do this. If it can, please provide links to how-tos.

Please do a search for 'solution domain mapping' as it's been discussed at great length with a specific walkthru. Can't give you a link as I'm on a terminal.

You still have to pick one on install though. pick subdomains, then like was suggested above, do the domain mapping thing.
