WPMU only has an "Add Media" button for uploading from the write page, but normal Wordpress has "Add an Image", "Add Video", "Add Audio" and "Add Media" buttons
Is this the case on your install?
Anyone know why?

Yep, that's the norm. No idea why though.
Because there's nothing in the code that matches up with allowed filetypes:

Why have an Upload Video icon when you don't allow it?
I added a comment to that issue, as there's another option which allows WP-Admins to have our cake and eat it too:
Another option would be to add a 'Limit Media Upload options' checkbox or radio button group to
/wp-admin/wpmu-options.php
adjacent to the Upload File Types: field, so you can still allow for the addition of the "Add an Image", "Add Video", "Add Audio" and "Add Media" buttons.

The funny thing though... those buttons are more show than feature.
They won't embed a video, or anything different than what the standard asterisk button does.
