I would like to allow some plugins only for specific users ...
Do you know how I could do that ?

There is a premium plugin available which does something similar: http://premium.wpmudev.org/project/Premium-Lite

Actually, that plugin has been superseded by http://premium.wpmudev.org/project/Upgrades

Which could be used to do something like that.

Or for a free option, you could use

While you won't be able to hide/show plugins for specific users, you can hide a specific plugin from users and then activate for specific users via their backend.
